Dinner in a Basket

My cookbook project got another shot in the arm last week when my friends and I took a cooking class from Judith Cullen. This popular cookbook author is well known for her cooking classes and demonstrations featuring fresh, seasonal foods and menus.

After a quick pre-party at Elsie's, we joined about 10 others for a fun, inspirational and delicious evening! Judith's menu stated with "Olive Oil Crackers with Sun-dried Tomato, Capsicum and Olive Pesto." We learned how to make "Schnitzel (stuffed and rolled with venison mince, pistachios and apple," "Kosheri" (rice, lentils and noodles topped with a spicy tomato sauce), and "Cucumber, Tomato and Poppy Seed Salad." Dessert was "Chocolate and Prune Loaf topped with Raspberry Curd" which I more than appreciated the next day.

I became an instant fan of Judith's and added her top selling cookbook Dinner in a Basket to my library.
